Mexican Food...

I love Mexican food... just love it... I made grilled carne asada tacos the other day...

The meat was so tender and juicy...

and of course I made my famous guacamole and salsa...

BLT

I was dreaming about a BLT... So I bought a fresh pump tomato, grilled up some crispy turkey bacon and the rest is history... I doubt it took 2 minutes to gobble this baby down...

Terrible Chicken Strips...

I love fried chicken, mmm especially fried chicken strips! So I decided to try a Weight Watchers recipe the other day...

I gathered the stuff... chicken, seasoned bread crumbs, and some hot sauce.

I cut the chicken into strips and soaked them in hot sauce.

Then I breaded the strips and laid them out to bake...

I baked, and baked, and baked the poor little guys... they never got crispy... and I had to drown them in ranch to give them any flavor at all... what a waste of good chicken...

Traffic...

I have had to drive into the office quite a bit lately... I try to relax and listen to the radio but coming around the bend off the toll road to this just makes me sad.... sigh...

Lisa...

My sister and I butt heads sometimes... this week she did the neatest thing... she called and asked to meet me for dinner... the occasion? no reason... her and her husband just wanted to eat with their brother... we had pho... we laughed and had a great time...

Yoko Ono said once... The food was OK, but the company.... the company was delicious... I love my little sister...

Havarti Olive Hors d'oeuvres

Today was is my Boss' birthday so to celebrate we all brought in food to munch on... we are always looking for an excuse to eat all day long!

I made these little hors d'oeuvres ...


I started with some creamy Havarti cheese, crescent rolls, and green olives...


I cut the crescent rolls into small pieces and wrapped them around a chunk of Havarti cheese...


I placed a green olive on the top and baked them till they were golden brown and the cheese bubbled out the sides... they were wonderful - buttery, creamy, and salty from the olive...

Too Fast...

I love my kids... well they aren't really mine, but I get to borrow them for an hour each week... two years ago I broke away from being my sisters assistant leader and took on my own Sunday school class. These little guys were barely 4 and most of them cried on the first few days of class... it was horrible... I thought at the time, "what am I getting myself into"
Now - two years later they come running into class yelling "Mr. B, Mr. B - I learned my bible verse" In a few weeks they will move up to the elementary level and leave my class... I thought I was ok... then this week was hard... I started to think about not seeing their little faces each week... I am really having separation anxiety... Where did the time go? It seemed so fast...


I guess I should thank God for the time I did have with them and look forward to my new group of 4 year olds... hmmmm

Out of the 80's

I finally got out of the 180's this week. Weight Watchers is going so well - I am really learning how to eat and be satisfied without shoveling down garbage. I munch all the time and lose weight just about every week. Today I weighed 179 - that's a loss of 17 pounds... my pants fit so nice...

New Truck...

I had to do it... My Lexus would not pass smog - it needed almost $3000 worth of work and I owed a boatload on it still... The Toyota dealer paid off the Lexus and I got this 2009 Tacoma Prerunner. It is awesome... just what I wanted... although the payment is a little high, it's better than worrying about my aging Lexus...

Dirty Dancing...

Last night we went to the Pantages to see Dirty Dancing... well first we went to Canter's for Lisa's birthday dinner - Happy Birthday little sister - 29!

I had Pastrami on rye...

Mimi had Corned Beef and Matzo Ball Soup


Doug's Mom got Lisa an amazing strawberry cheesecake for dessert...

We made our way across town just in time to see the show.. and OH WHAT A SHOW... The dancing was amazing, the sets were probably the best I have ever seen... There was one scene where they practiced their lift in the water and it was just awesome! I would see it again for sure... Mimi and I sat together... she is my favorite theater buddy...

Pinkberry..

I love Pinkberry - it's so fresh and tart... and their raspberries are amazing...Barb and I went yesterday after lunch and it was delicious...

Fasting...

I was uncertain about going to Honduras... I had not heard a clear answer from God... Last year it was like a two by four to the head - GO MAN GO! This year... I kept listening, but nothing...

So I fasted yesterday... Have you ever fasted? You should try it... seriously...

With the absence of food your body breaks down and you have no choice but to rely on God to get you through... I prayed all day long, filled my ears with his praises and read The Word...

God reminded me of where I am falling short and that I can be useful to His kingdom work... Honduras here I come... I am so excited!

Fabulous... er unfabulous Laughlin Nevada

So my glamorous work travels this week brought me to lovely Bullhead City, Arizona (don't worry I watched for cops the whole time)... Just to be safe I stayed across the river in hi-brow Laughlin Nevada... I remembered as a kid this place being so cool and glitzy... now a days it resembles a retirement community... the hotels are run down and dirty... I saw an awesome skunk outside my hotel, then a cute pair of roaches as I waited for the elevator... awesome!

The room at the Aquarius with it's high rise view of the Colorado River was pretty OK


and there were enough national chain restaurants to keep me happy with food and within weight watchers standards... I did win about $150 in the casino downstairs... but, thank God I leave tomorrow for Vegas with Dad... should be an awesome weekend of bowling and fun...
