A week to go...

Tomorrow is 1 week until I leave for Honduras. I am so ready to go... work has been hectic and overwhelming lately and I need a break...
Saturday we had our craft preparation for the VBS... the turnout was good and everything got done...



Now I need to get shopping and packing... the trip will be here before I know it...

Carnitas...

I love juicy carnitas. I placed a huge pile of cheap pork into the crock pot with some green sauce and cooked it for about 10 hours... it came out SO NICE... moist, flavorful, perfect...


I decided to make wet burritos for everyone on Saturday so spread some beans on a soft flour tortilla... not just any beans... full flavor (full of lard) beans from Cardena's

Carnitas on top of the beans...

Then I rolled them up and topped them with tomatillo enchilada sauce...

and cheese, lots of cheese...

They were wonderful; spicy, savory, cheesy good...

Fathers Day Feast...

Lisa had everyone over for a yummy fathers day dinner on Friday night... she did a taco bar...

Flour or corn tortillas, Chips, Ground Beef, Shredded Chicken, Beans & Rice

Lettuce, Tomato, Salsa, Onion, Cheese Cilantro...

Everyone had a nice time, the food was excellent... My sister really entertains well...

The chicken was awesome...

From ghetto to fabulous....

So I went on to Sacramento last week for work... not a far drive from the bay... I did some work at the store, then went to check into my hotel - The Marriott Courtyard. As I pulled into the parking lot there was a cop car in the lot which I thought was strange but just went on to check in... As I walked down the hall to my room there were 3 guys leaning against the wall staring at me... watching as I walked past... which made me very uncomfortable... As I entered my room and promptly locked the door behind me I kicked off my shoes to notice the horribly stained carpet - gross...


By that point I had enough... I turned around and went to the front desk to complain. The manager was completely apologetic and gladly changed my reservation to the Marriott Downtown - a high rise one block from the capitol building, situated among posh trendy restaurants and hip bars...

As I rode the elevator up to the 7th floor and entered my room I was VERY IMPRESSED... what a lovely place... the price was way more but in my mind you cant put a price tag on your own safety...


I even had a view of the capitol from my window... nice

San Francisco Adventure...

So my glamorous work travels took me to the Bay Area this week. I lived up there for a few years when I was younger so I was pretty familiar with the area. I worked hard at the store and finally got some time to chill out on Sunday. I decided to take the subway over to San Francisco to walk around and look for something to do.

As I walked up the stairs from the BART station the sun was shining and the birds were chirping on a lovely spring day...

I hopped on the F line (old trolley cars) and cruised around the Embarcadero to pier 33.



I thought an Alcatraz cruise would be fun but they were all sold out... So I walked down to pier 39 and low and behold! A bike rental shack... The girl yelled out to me - "HEY YOU - you wanna bike the Golden Gate Bridge?" "Who me?" I asked... "YEA, c'mon" she replied... So I bit... for $14 I rented a bike and hopped on...



It was about a 5 mile round trip but totally awesome... I stopped in the park and ate a sandwich I conveniently packed...then I finished the trip to the bridge...



I have to say the trek to the bridge was way harder than the bridge itself... I cruised across to Sausalido and back in no time...

Upon my return I hit up fishermans wharf.... the displays were packed with fresh seafood... it all looked so wonderful!

Especially the bread bowls filled with clam chowder...

And the whole steamed crabs...

I decided on a cup of crab meat...


and a tangy shrimp cocktail...

I hit the train home full and tired from an awesome day... Sometimes I love a nice day by myself... I left for Sacramento today... not looking forward to working in the ghetto.... hmmmm

Fresh N' Easy Salmon

I am beginning to like shopping at Fresh N' Easy... They are building one a block from my house so I think I might shop there more regularly when they open it... This week I found a very low calorie honey dijon salmon pack...
I thought what the heck... I'll give it a try so I grilled it up and you know it wasn't half bad.
At $4 it was way cheaper than any restaurant salmon... I put it on a foam plate cuz I was feeling kinda trashy that day...

Hummus

I decided to make hummus the other day, because the Pioneer Woman said it was the right thing to do.

I gathered all the ingredients (minus the garlic) I just hate garlic...

The tahini was weird... kida like peanut butter but sesame flavored... a little of this went a long way...

I tossed everything in the blender and whipped up the most delicious hummus... I gobbled down many spoon fulls of it....

In keeping with the middle eastern theme I put some chicken kebabs in the broiler to eat the hummus with... simply lovely... so rich and creamy over the kebabs...

Funny Car...

Because Metrolink is overcrowded and they have not yet received additional passenger cars they ordered... They went ahead and leased some old time 1980s Utah Transit Authority rail cars.

They put one behind the locomotive on quite a few trains in the system. I rode one to work the other day just for kicks...


They are only one level and very wide. They seat 5 across.

The brown vynal seats were very firm and smelled kinda musty...

The windows were very narrow also... wierd... Once was enough for me... I will stick to the comfortable modern cars.
